Unfortunately the weekend consisted of pre-planned dining out so my Clean & Lean Challenge had to momentarily be put on hold. However, it’s a new week and it calls for some new dishes. On the menu last night was James Duigan’s Lemongrass and Coconut Prawns with Glass Noodles. A perfect mid-week meal and post-workout dish to refuel my energy after a particularly difficult cardio hit. Like most of the dishes I tweaked it slightly by adding some peppers, spring greens and cashew nuts to give it an extra hit of nutrition and give it a little more substance as I was starving.
It was incredibly easy and quick to cook and, thanks to the creamed coconut, left a refreshing and light taste that I couldn’t get enough of. Personally, I hate sauces in stir-fry-esque dishes so with the subtle hint of coconut and cashew nuts, it really was the perfect amount of flavour.
And the end result was…light and fresh!
Ok, it looks a little different from the image in the book and although you can’t see it, there’s lots of lemongrass floating around in there giving it a deliciously oriental tang.
