DAY 3 OF THE CLEAN & LEAN CHALLENGE: GREEN BEANS & COCONUT SALMON WITH STUFFED AUBERGINE

Last night was a tough one as the Green Beans, Mustard Seeds and Coconut Salmon doesn’t specify what should accompany the dish. And if it’s nothing then I would be seriously hungry and more likely to opt for a cup of tea and cookie! So, to avoid this we decided to make another side dish from the book which is stuffed aubergines. I absolutely love aubergines so this was a no-brainer for me.

The Prep…

We changed the recipe slightly and included spinach and mushrooms with the garlic, onions and tinned tomatoes..

Lightly browning coconut is the most heavenly smell ever! I was so pleasantly surprised how well it went with something so savoury as green beans. It gave it a wonderful texture and slightly chewy consistency. Amazing!

And the end result was…filling!

My word this was one filling dish and perhaps was a little too much for one dish. But it’s jam-packed full of goodness so although I didn’t finish it all, it kept me away from the biscuit barrel (which is hard to do!) Admittedly it was quite time-consuming and took a lot of precision with the timing to juggle both dishes at the same time but it’s a fantastic dish to do when you have a little more time in the evenings. We also kept back some of the toasted coconut which was delicious on this morning’s yoghurt and muesli!
